For the Roasted Chickpeas:
- 2 cups cooked chickpeas or 1 can, drained and rinsed
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp garlic powder
- 1/2 tsp dried oregano
- 1/4 tsp salt adjust to taste
- A pinch of black pepper
For the Tzatziki Sauce:
- 1 cup Greek yogurt or plant-based yogurt for vegan
- 1/2 cucumber grated and squeezed to remove water
- 1 clove garlic minced
- 1 tbsp fresh dill chopped
- 1 tbsp lemon juice
- Salt to taste
For Assembly:
- 4 pita breads
- Sliced lettuce tomatoes, red onions
- Optional: Crumbled feta olives, or pickled onions
Roast the Chickpeas:
Preheat the oven to 400°F (200°C).
Toss chickpeas with olive oil, smoked paprika, cumin, garlic powder, oregano, salt, and pepper.
Spread chickpeas in a single layer on a baking sheet.
Roast for 25-30 minutes, shaking the pan halfway through, until crispy and golden.
Make the Tzatziki Sauce:
In a bowl, combine Greek yogurt, grated cucumber, minced garlic, dill, lemon juice, and salt.
Mix until smooth and creamy.
Refrigerate until ready to use.
Assemble the Gyros:
Warm the pita bread in a skillet or toaster.
Spread a generous layer of tzatziki sauce on each pita.
Add roasted chickpeas, then top with lettuce, tomatoes, and red onions.
Optional: Sprinkle with feta or olives for extra flavor.
